Recipe | Carolina Gold BBQ Sauce

I had never heard of a mustard-based BBQ sauce until recently.  I found myself in a vortex of late-nigh You Tube wanderings, and I came across a video of Stephen Colbert extolling the virtues of mustard-based BBQ sauces.  What?  I had never heard of it.  But it turns out that it’s very real, and more important, very delicious.

You will need:

  • 8 oz. yellow mustard
  • 1/3C apple cider vinegar
  • 3T ketchup
  • 2 6 oz. cans pineapple juice
  • 2T fish sauce
  • 1t rosemary
  • 1t mustard powder
  • 1t garlic powder
  • 1t onion powder
  • 1t chili powder
  • 1t salt
  • 1/2t celery salt
  • 1/2t black pepper
  • 1/2t smoked paprika

You need to:

  1. Pick yourself up off the floor, because that’s a lot of ingredients.
  2. Combine all in a saucepan and bring to a boil.
  3. Reduce and simmer for 20-30 minutes, or until thickened.

This makes a LOT of sauce, around 2 cups.
