I did a lot of grilling over the summer, and at some point I tried my hand at chicken curry. This was some of the moistest chicken I’ve ever had – absolutely delicious.
I recently made a few different types of chicken wings for my birthday (I will not be saying which birthday that was!), and I thought I’d try the marinade on some wings. They were also awesome!
You will need:
- 1C full-fat coconut milk
- 2T dried basil
- 1.5T curry powder
- 1t chili powder
- salt & pepper to taste
You need to:
- Marinate for at least 4 hours.
- Cook chicken as normal (grill, broil, etc.)
